Start at season one of the series and go forward. Side Quests is chronologically the earliest thing here and is still the wrong place to begin: it is written for people who already know these characters.

In order. It starts as throwaway comedy and quietly turns into something else around season three, and the long arcs Stakes, Islands and Elements sit inside seasons seven, eight and nine.
Four specials after the finale, in release order. Together Again in particular reads as an epilogue to the whole thing, so leave it to last of the four.
The sequel series, and chronologically last. It is built on the condition the finale left Simon in, so it genuinely wants everything above first.
A prequel about Finn and Jake as children. Watch it whenever you like after the main series; it is a return visit, not an entry point.
Then what? A second season of Side Quests is due on 2 October 2026. An Adventure Time film and a preschool series called Heyo BMO were both announced in June 2024 with no dates, and a series called Bubblegum and Marceline was ordered by HBO Max in June 2026, also with no date. None of them is listed, because none of them has one.
