Almost nobody starts at episode one, and every streaming service has already made that decision for you: they begin at episode 210, where the vampire arrives, and leave the first two hundred and nine out entirely.

Barnabas Collins is released from his coffin here, and the actor appears in 211. This is where the disc collections begin and where streaming begins by default, so it is the path of least resistance.
The first two hundred and nine are a gothic soap with no supernatural element. They are not bad and they have their defenders, but nothing in them is required.
Long-time viewers often point newcomers at the start of a major storyline instead, and 1897 is the one most often named, because Barnabas arrives in it disoriented and you learn alongside him.
Then what? The two 1970s films are alternate tellings rather than continuations. The 1991 revival is twelve episodes and stops mid story. The 2012 film is a comedy and shares nothing.
