The British run since 2015, the American one since 2019, All Stars, Games, Aftersun and the 2005 celebrity original that started it. Which series is which, and which episodes your source is counting.
Nothing here has to be watched in order and no series depends on another, with one exception: All Stars is built entirely on you already knowing the Islanders, so it is the one thing that should not be first. Pick a strong series rather than the earliest one. The thing worth knowing before you start is that the episode numbers you see quoted elsewhere are not on a single basis, and this page says which basis each series uses.
