The three Ash films are one continuous change of tone from horror to slapstick, and they only work in order. The reboot line shares the book and nothing else, so it can wait or be skipped.

A straight horror film made for almost nothing, with none of the comedy the series is now known for. Start here so the turn the second film takes actually registers.
Half sequel and half remake: it restages the first film with most of the cast removed, then plays the same night for laughs. It contradicts the original on screen and does not care.
Ash in 1300 with a chainsaw hand, which is where the tone finally arrives. It is barely a horror film and it is the one people quote.
Then what? Then Ash vs Evil Dead, three series of ten, which continues straight out of Army of Darkness thirty years later and is the real fourth film. After that the reboot line, 2013, Rise and Burn, in any order you like; they share the book and the world but no characters. Evil Dead Wrath is dated 7 April 2028.
