Two short seasons and one feature-length special that came out after season two, is set long before season one, and was written as the run-up to a season three nobody has ordered.
Twelve episodes and then a film, and the film is the only decision on this page. Watch the two seasons first even though the special is set decades earlier, because the special is built to be read against an ending you have already seen.

Six episodes, set in 1601 in a Joseon where the king is dead and not staying dead. Nothing precedes it in broadcast terms and it explains its own world from scratch.
Six more episodes, picking up on the same night season one ends. Its last scene introduces a woman with no name and no explanation, and that scene is the reason the special exists.
Ninety-two minutes explaining who that woman is and where the resurrection plant came from. It answers season two's final shot, so watching it earlier costs you the question.
Then what? That is everything that has been made. Ashin of the North ends on a setup rather than an ending, deliberately, because the writer intended it as the bridge into a third season. No third season has been ordered, so treat the special as the current stopping point and not as a cliffhanger that is about to be resolved.
