Four films, four television series and a pile of shorts, and two of those series happen before the first film.
Watch the four films in release order and you will not go wrong. The complication is that two of the television series are prequels and one is not in the timeline at all. All Hail King Julien is set on the island before the first film and its last season ends exactly where that film begins, so it genuinely works as a starting point if you want one. A Little Wild is a separate prequel with the four leads as children. The Penguins of Madagascar series is not placed anywhere on purpose: its creator has said it is a parallel universe.
