Release order is story order and there is no trick to it. The only thing worth knowing is which of the older films the newer ones actually need, because two of the six Rocky films do real work later on.

A small film about a man who is not going to win, which is not what the sequels turned the series into. Everything else in nine films is built on its ending.
The Cold War one, and the film Creed II is a direct sequel to thirty-three years later. Skipping it makes the eighth film's entire plot land as nothing.
Apollo Creed's son training under Rocky, which is a handover rather than a reboot. It works as an entry point, but its emotional weight comes from the first film.
Then what? Fill in Rocky II, III, V and Rocky Balboa in order between the first and Creed, then Creed II and Creed III. If you only ever watch four of them, make it Rocky, Rocky IV, Creed and Creed II. One warning: the 2021 Rocky vs. Drago re-edit of Rocky IV cuts material that is in the version everyone talks about, so watch the original first.
