One television series, two prequels set generations earlier, and the novels the whole thing came from. The prequels are self-contained enough that they can genuinely be watched first, which is unusual, but the main series is the one everything else was built on the back of.

Ten episodes, and the one that made all of this exist. It is also the most self-contained series of the eight, so it is a fair test of whether the rest is for you.
Set about a hundred and seventy years earlier with an entirely separate cast, so it needs almost nothing from the main series. Smaller, more focused, and the better made of the two by most accounts.
The first novel, and the series follows it closely enough that reading it after series one feels like a fuller version of the same story rather than a different one. It is where to start if the ending put you off the television.
Then what? After that: Game of Thrones runs eight series, and the last two are the reason this franchise has an argument attached to it: they overtook the books and it shows. House of the Dragon continues, A Knight of the Seven Kingdoms is a smaller story set ninety years before the main series, and the five published novels go considerably further than the show ever adapted well.
