Eight series and more than a thousand episodes, nearly all of it procedural, so very little has to be watched in order. The original is where to start; after that the spin-offs are largely independent, with one prequel that is much better late than early.

The one everything else came from, itself launched out of a legal drama in 2003. Twenty-plus series is daunting, but the format means any episode is a fair sample.
Introduced inside the parent show and then run for fourteen series of its own, with a looser, more undercover approach. It needs almost nothing from the original.
A prequel set in 1991 following a young Gibbs, and it only lands if you already know the man he becomes. Watching it early throws away the whole reason it exists.
Then what? New Orleans, Hawai'i and Sydney are all self-contained and can be picked up whenever. Tony & Ziva follows two characters from the original show long after they left it, so it needs a fair amount of the parent series behind it. New York is the newest and has no episode count announced yet.
