Seven films that do not agree with each other about what happened. Five were made by Michael Bay between 2007 and 2017; the other two are a separate, quieter line that starts over. Starting with the newer line is the better experience and the shorter commitment.

Set in 1987, made deliberately small, and the one film in this franchise with a broad critical consensus behind it. It restarts the continuity, so nothing before it is required.
Set in 1994 and follows on from Bumblebee directly, with the same lighter approach. Two films in and you have the whole of the newer line.
The one that started the run, and the way in if you want the Bay films instead: they are much bigger, much longer and much louder, and this is the best liked of the five.
Then what? After that, the four Bay sequels run in release order and get progressively more divisive; Dark of the Moon and The Last Knight are where most people stop. Nothing in the newer line depends on any of them, so treating the two groups as separate franchises is a perfectly reasonable way to watch this.
